For something a little more informal, Fujiya (3624 Shelbourne / 250-598-3711) is small Japanese market that makes fresh sushi in the back of the store. Located near the University of Victoria, Fujiya's sushi is very affordable and of a good quality. They usually have great variety of pre-made sushi (made that day) that you can just grab and go with, or you can ask them to make something for you. Fujiya also has fresh miso and other types of soup available for around a dollar a bowl. There are a few tables in front of the market, but Fujiya is more of a take-out place.
